![]() | Peach and Almond Dessert RecipeThis easy to prepare dessert is great when you have unexpected guests. Try using other canned fruit for interesting variations.
Preheat the oven to 175°C, 350°F or gas mark 4. Separate the peaches and juice in a sieve and save the juice for later. Grease a pie dish with margarine. Melt the butter and add the sugar, egg and almond essence. Mix. Add the flour, baking powder,milk and ¼ cup of the peach juice and mix. Put the best peaches aside for the top. Put the rest of the peaches in the pie dish and spoon the mixture from the bowl over them. Arrange the rest of the peaches on top with the flaked almonds and bake inthe oven for around 30 to 40 minutes. Once cooked and cooled, add extra almonds as needed and glaze the top with a mixture of ½ cup icing sugar and 2 to 3 teaspoons of peach juice.
