Fresh Pasta Recipe

  • 300 grams of strong flour
  • 3 eggs
  • 1 tablespooon of olive oil
  • 1 teaspoon of salt

Put the flour, salt, olive oil and 1 egg into a large bowl or food processor. Mix or process adding the 2 other eggs as necessary to form a ball. Kneed the dough until smooth and elastic. Cover and rest the dough for an hour. Roll dough out thinly or as required. Slice into thin noodles, or roll through a pasta machine. The pasta dough can be covered with plastic wrap and refrigerated overnight if necessary.
